Fresh Strawberry Pie Recipe

Best fresh strawberry pie recipe! Nothing says beautiful childhood memories better than fresh strawberries. I grew up in Orange County, California, surrounded by endless strawberry fields and orange groves. Having grown up on the South Dakota prairies, my mom knew how to can and preserve all kinds of fresh fruits in season. So we had strawberry syrups, strawberry jams and jellies all year round. But in season? Fresh strawberry pie was on the menu every week!

Ingredients for Pie Recipe

1 single crust pre-baked pie crust ( Marie Callender’s frozen are awesome)
6 C. Fresh, ripe (not frozen) large strawberries, hulled (about 1 ½ qts.)
1 C. Sugar, granulated
3 T. Cornstarch
½ C. Water
Red food coloring is totally option. If you’re going to use it, I suggest using the paste color such as for cake decorating. Liquid food coloring does not produce the same outcome as the paste.
4 oz. Cream cheese

Directions for Pie Recipe

Forget the oven because there is no baking here!
Thaw and bake a single pie shell if using frozen, or use your favorite single crust recipe and bake.

Strawberry Glaze

Use a fork, potato masher, or even the back of a spoon to smash enough berries to make one cup.
Grab a small sauce pan and add the sugar and cornstarch together. Gradually stir in the water and smashed strawberries.
Cook over medium heat, stirring constantly until the mixture thickens and boils, then boil for an additional minute.
This is the time to add the paste food coloring if you wish. Allow the mixture to cool.

Strawberry Pie Assembly

In a small bowl, beat the cream cheese until smooth, and use a spatula to spread it on the bottom pie shell.
Now it’s time to take those beautiful strawberries you just cleaned and arrange them on top of the cream cheese. Be creative with the pattern or not. That’s entirely up to you. Pour the strawberry mixture over the freshly placed strawberries. Refrigerate for at least three hours to allow the pie to set. Now, you serve this delicious pie with freshly whipped cream.
